I made this dish recently for dinner for myself and it was so delicious, I felt I needed to share! Creamy polenta is enhanced with caramelized onions, roasted garlic, and vegan parmesan. That in itself makes for a delicious meal, but let's make it better, shall we? The polenta is topped with a ratatouille consisting of roasted portabella mushrooms and carrots, fire roasted tomatoes, spinach, white beans, and a variety of seasonings. Hearty, comforting, delicious...what more do you need in a meal?
